Escovitch fish is a very popular Jamaican dish that is served as breakfast or as a main course.
The fish is fried and covered with a spicy sauce mixture of onions, bell peppers, carrots, scotch-bonnet pepper and vinegar.
2 lb fish (fillet or whole)
¼ cup flour
½ cup oil
½ tsp. salt
½ tsp. black pepper
Escovitch Sauce
1 cup vinegar
1 cup water
1 medium size onion sliced
1 cup julienne carrots and bell peppers
1 scotch- bonnet pepper (remove seeds)
6 whole pimento berries
2 tsp. sugar
Prepare fish for frying by seasoning with salt and
pepper.
Lightly coat with flour.
Fry fish in skillet with ½ inch deep oil.
Fry to golden brown color, then place on paper towel
remove excess oil.
In a sauce pan add vinegar and water, bring to boil.
Add julienne vegetables and sugar, cook for a few
minutes.
Just before serving pour over the fish.
Can be serve with as a snack with bread or a starch of you choice.
